Trustworthy Odia Cuisines -Mixed Vegetable Ghanta

Ghanta Tarkari - A Simple Odia Style

Ghanta Tarkari may be a delicious vegetarian dish where “ghanta” means mixed and “tarkari” means curry – so basically Odia Mixed Vegetable Curry. 

Traditionally, this dish is formed with typical Indian vegetables many of which are hard to seek out outside or India or are just not available year-round so just be happy to use your favorite vegetables for this dish.


Ghanta tarkari has become an everyday meal in lately as ingredients are easy to source.


Mixed Vegetable Ghanta

However, within the older days, the availability of most of the ingredients was very seasonal and spotty so it had been only made during festive days. 

Today we still provide a nod to the present tradition by preparing a special ghanta tarkari during ‘Dutiya Osha’ within the coastal areas or ‘Dutibahana Osha’ because it is named in Western Odisha. during this festival, childless women pray to Lord Dutibahana for a toddler and consume ghanta as prasad. 

Women with children also pray, albeit for the protection and welfare of the youngsters. Women also pray for the well-being of their brothers during this festival.

Ghanta Tarkari

Ingredients:
  • 1 cup Pumpkin (Cut into cubes)
    • 2 large Potatoes (Cut into cubes)
    • Some green bean (cut into 1 inches pieces)
    • 10-12 French beans (cut into 1 inches pieces)
    • 1 raw banana (peeled and dig cubes)
    • 1 Radish (Cut into cubes)
    • 1 Sweet Potato (peeled and dig cubes)
    • 2 Colocasia Root or Arbi (peeled and dig cubes)
    • 1/2 cup Elephant foot yam (peeled and dig cubes)
    • 1 Brinjal (cut into cubes)
    • 1/2 cup Ash gourd (peeled and dig cubes)
    • 5-6 Lima Beans (cut into 1 inches pieces)
    • 1/2 cup Tomato
“ghanta” means mixed
  • 1/2 cup elephant apple (peeled and dig cubes)
    • 1/2 cup ripe Cucumber (peeled and dig cubes)
    • 3 Pointed gourd (Cut into cubes)
    • 3 Spine Gourd (Cut into cubes)
    • 1 Ridge Gourd (peeled and dig cubes)
    • 1/4 cup freshly grated coconut
    • 1/4 cup fresh chopped coconut
    • 1/4 cup freshly grated ginger
    • 1 herb
    • 1/2 cup soaked Black Chickpeas
    • 1/2 cup Green Moong Sprouts
    • 1 teaspoon Turmeric powder
    • Salt to taste
Odia food recipes
  • A pinch of Asafoetida
    • 1 tablespoon Jaggery or sugar
    • 2-3 Dry red chilies for tempering
    • 1 teaspoon Cumin seeds
    • 1/2 tablespoon freshly roasted Cumin powder
    • 1/2 tablespoon Red chili powder
    • 1 tablespoon Ghee / drawn butter
Method:
  • To begin with the Ghanta Tarakari, thoroughly clean the green moong beans and soak overnight in enough water. Drain the water and tie the moong beans during a cloth. Keep it covered during a container for each day. You’ll get moong bean sprouts during a day.
    • Soak the black chickpeas a minimum of for 4 to five hours, preferably overnight.
    • Dry roast 1 tablespoon cumin seeds and 4 to five dry red chilies. Let it calm down completely. Then grind it to a fine powder and keep aside.
    • Now, thoroughly wash the vegetables and cut them into cubes.
  • Since some vegetables take an extended time to cook, you would like to cook them first. So, take an important bottomed vessel and add the potatoes, elephant foot yam, colocasia, pumpkin, sweet potato, radish, black chickpeas alongside 1 cup water, turmeric powder, salt, bay leaf, grated ginger. Mix everything well and let it cook.
    • After 5 minutes, check on the vegetables and add the remainder of the vegetables, and chopped coconut thereto. Now, cover it and let it cook on medium flame. No got to add water thereto because the vegetables will start releasing their own water.

  • Once all the vegetables are half done, add the tomatoes, and therefore the powdered jaggery or sugar thereto. allow them to cool completely.
    • Remove the vegetables from heat and add the moong bean sprouts thereto.
    • Now, heat the drawn butter or ghee during a pan. Add the red chilies and cumin seeds, once it splutters, add the asafoetida, roasted cumin and red chili powder thereto and immediately pour this over the cooked vegetables. Add freshly grated coconut and blend everything well. Let this cook on low flame for 4 to five minutes.
